Currently, we don't support monitoring of specific mail box metrics in Office 365. We shall take this up as a feature request. Although we can't assure a timeline, we will ensure this is done at the earliest. 

Alternatively, you can write a plugin for monitoring these metrics in Site24x7. Let us know for further queries, if any, in the below thread.
